BLINY

 

Basic recipe

  • 2 cups warm water
  • 2 cups hot milk
  • 3 cups flour
  • 1 package fresh  yeast (or 1 teaspoon of dried yeast)
  • 1 egg
  • 2 oz melted butter (or oil)
  • salt and sugar at your taste (appr. 1 teaspoon salt & 2 Table spoons sugar)

Directions

In a small cup dissolve yeast and sugar in warm water, add 1-2 teaspoon flour.  Allow to proof – about 10 minutes.  Meanwhile sift flour to a big bowl, add warm water, salt and sugar and mix very well.  Add the yeast.  Mix again while smooth.  Set aside in a warm place covered with a thick towel.

When the dough is risen (it takes about an hour), dilute it with a very hot (actually, boiling) milk, pouring it into the dough with a very thin stream, mixing dough fast at the same very time.  Add then melted butter and an mixed egg (;it’s better to mix an egg in a cup with a small amount of dough, and then add it to the bowl).  Mix the dough well.  Set aside in a warm place, covered. 

When dough is risen, you are ready to fry bliny.  This is the most important part of the whole thing. 

Place cast iron frying pan (though it could be a regular aluminum pan as well) onto the burner and heat very well.   Brush the pan with an oil and  pour dough into the pan  with the ladle or big spoon.  When it is golden from one side, turn it over with spatula and fry until ready.

The first blin may stick to the frying pan.  Try to use more oil for the beginning, pouring it on the pan.

Bliny in another manner

  • 2 cups  warm water
  • 3 cups flour
  • 2 cups  hot milk
  • 1 package yeast (or 1 teaspoon of dried yeast)
  • 1 egg
  • 2 oz melted butter (or oil)
  • 1 teaspoon salt
  • 2 tablespoons sugar (or whatever you needed)

 

Place yeast in a cupl with warm water and 1-teaspoon sugar.  Allow to proof.  Meanwhile pour flour in a big bowl, add warm water, salt and sugar and mix very well.  Add risen yeast.  Mix again.  Set aside in a warm place covered with a thick towel. 

When the dough is risen (about in an hour), add well-mixed egg and melted butter. Set aside in a warm place for another hour.  When the dough is risen dilute it with a very hot milk, pouring it into the dough with a very thin trickle, mixing dough fast at the same very time. 
Now you can start to fry bliny.

Buckwheat Bliny

  • 2 cups warm water
  • 3 cups flour
  • 2 cups of hot milk
  • 1 package yeast (or 1 teaspoon of dried yeast)
  • 1 egg
  • 2 oz melted butter (or oil)
  • 1 teaspoon salt
  • 2 tablespoons sugar (or whatever you needed)

The recipe is the same as the basic one, the only difference is that you need to replace ½ cup of regular flour with buckwheat one.
